2 chicken breasts
3 Tbsp olive oil
4 Tbsp lemon juice
Zest of one lemon
4 garlic cloves, grated
2 Tbsp chopped cilantro or parsley
Salt and pepper to taste

Directions:
Directions:
In a bowl, combine the olive oil, lemon juice, lemon zest, garlic and cilantro or parsley. Season with salt and pepper. Add chicken pieces to the bowl. Todd the chicken to coat. Cover the bowl and place in the refrigerator for several hours to marinate.

Thread the chicken pieces onto skewers. Pre-soak the skewers in water for about 20 minutes if wooden ones are used.

Grill the kabobs, turning once or twice until the chicken is cooked.
