1 1/2 lb. Mild Italian sausage removed from casing, cooked and drained
1 clove garlic, chopped
1 small onion, chopped
1 large can 28 - 30 ounce Italian seasoned diced tomatoes
1 1/2 cups red wine
5 cups beef stock
1/2 tsp each of oregano and basil
3 Tbsp parsley
1 medium bell pepper, chopped
2 medium zucchini, chopped
2 cups uncooked bow tie pasta

Directions:
Directions:
Sauté garlic and onion in small amount of sausage fat. Add tomatoes, wine, stock, herbs and bell pepper and simmer for an hour or so. Cool and refrigerate overnight.
When you’re ready to serve the next day, warm soup and add zucchini and pasta. Simmer for 20-30 minutes until the pasta is tender. Serve with fresh Parmesan and crusty bread.
