In a warm skillet place buttered flour tortilla, butter side down.
Place the other buttered tortilla on top of it, butter side up.
After a minute, flip the whole thing over, take the now top tortillas and set it aside.
Grate some pepper jack cheese and spread it evenly over the tortilla that still in the pan.
Lay down a little onion, very thin tomato slices (just a couple) and some strips of Ortega chilies.
Place the other tortilla, butter side up, on top.
After about a minute, flip it over (very carefully) to finish cooking the other side.
Remove from skillet to a plate and cut like a pizza.
