Oil for sauteing

Directions:
Directions:
In a cast iron skillet, saute onion and garlic in a little oil until soft and fragrant.
Slice tomatoes and zucchini and layer them in the pan.
Sprinkle with salt & pepper.
Sprinkle grated cheese (just about any kind) over the vegetables.
Place in hot oven and bake until cheese is melted and golden.

My mom used to make this a lot when the garden was producing more tomatoes and zucchini than we could eat. I am not a big vegetable fan but I loved this dish. Mom made it really simple, but you could add any spices or seasonings that you like.
