40 oz. frozen broccoli florets
2 cans cream of broccoli soup
2 cups grated cheddar cheese
2 cups mayonnaise
2 tbsp. chopped onion
2 eggs beaten
Salt and pepper
1 stack Ritz crackers, crushed
2-3 tbsp. butter

Directions:
Directions:
Cook broccoli for 5 minutes—drain well. Mix soup, mayonnaise, cheese, onion, eggs, salt and pepper. Add broccoli. Pour in 9 x 13 greased casserole dish. Sprinkle with crushed crackers and dot with butter. Bake at 350º for 45 minutes or until knife inserted in center comes out clean.
