1/2 cup light oil (avocado, canola, grape seed, extra light olive oil)
1/2 cup vinegar (red wine, rice wine, champagne, apple cider, white)
1/2 cup sugar
2 cups whole cooked green beans
1 cup sliced cooked carrots
1 cup sliced raw celery
1 cup bell pepper (any color) cut into strips
1 medium red onion

Directions:

Prepare a dressing of oil, vinegar and sugar mixed together (shaking in a Mason jar works really well)
Steam the green beans and carrots until barely cooked.
Place all vegetables in a large salad bowl, pour the dressing over all and mix very well.
Place a heavy plate on top the salad and put in the refrigerator overnight.
Next day - take out the salad leaving the plate on top, invert and drain off all liquid.
Stir up to remix and serve.
