3 Carrots (coarsely chopped)
1 Onion (coarsely chopped)
1 Lb Red Lentils
3 Boxes of Chicken Broth
1 Can Stewed or Chopped Italian Style Tomatoes
2 Tablespoons Olive Oil
2 Tablespoons Butter

Directions:
Directions:
In a heavy saucepan, melt butter and olive oil. Add carrots and onions and saute until slightly soft. Add lentils, broth, and tomatoes. Simmer until lentils are soft. Puree soup in a blender till smooth.
