2 c. cooked rice
½ c. sour cream
1 c. chopped green onion
4 oz. can chopped green chiles (drained)
1 c. shredded cheddar
¼ to ½ c. grated Parmesan
salt and cayenne pepper to taste
butter for greasing dish and dotting top of casserole
½ c. chicken stock

Directions:
Directions:
Preheat oven to 450º. Cook rice. Butter 8 x 8-inch pyrex dish. Sprinkle with Parmesan. In a large bowl, combine rice, sour cream, green onion, green chile, cheddar, chicken stock, salt and cayenne. Spread in pan and top with more Parmesan. Dot with small pieces of butter. Bake 20 minutes. Serve immediately.
