2 tbsp. olive oil
1 onion, chopped
2 carrots, sliced in ½" rounds
4 cloves garlic, minced
½ tsp. dried rosemary, crumbled
¼ tsp. salt
¼ tsp. pepper
3 cups Heinz tomato juice
1 cup beef broth, sodium reduced
2 cups extra lean ground beef, cooked
3 cups large cubes day old Baguette, French or Ciabatta bread
¼ cup Parmigiano-Reggiano or Romano Cheese, grated
¼ cup fresh basil or fresh parsley, minced
1 cup water

Directions:
Directions:
Heat oil, cook onion, carrots, garlic, rosemary. salt and pepper, stirring occassionally until softened, about 8 minutes. Add tomato juice, beef broth and water; bring to a boil. Reduce heat; simmer 10 minutes. Add beef and bread; stir until bread has melted into soup and soup thickens; about 8 minutes. Stir in cheese and basil.
