2 tbsp. olive oil
1 onion, chopped
2 carrots, sliced in " rounds
4 cloves garlic, minced
tsp. dried rosemary, crumbled
tsp. salt
tsp. pepper
3 cups Heinz tomato juice
1 cup beef broth, sodium reduced
2 cups extra lean ground beef, cooked
3 cups large cubes day old Baguette, French or Ciabatta bread
cup Parmigiano-Reggiano or Romano Cheese, grated
cup fresh basil or fresh parsley, minced
1 cup water

Heat oil over medium high heat in large saucepan. Cook onion, carrots, garlic, rosemary. salt and pepper, stirring occassionally until softened, about 8 minutes. Add tomato juice, beef broth and 1 cup water; bring to a boil. Reduce heat and simmer for 10 minutes. Add beef and bread; stir until bread has melted into soup and soup thickens; about 8 minutes. Stir in cheese and basil.
