2 cups flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup orange juice
1 Tbsp grated orange zest
2 Tbsp shortening or butter
1 egg, well beaten
1 1/2 cups fresh or frozen cranberries, coarsely chopped
1/2 cup nuts, chopped

Directions:

Preheat oven to 350º F.
Mix together flour, sugar, baking powder, salt, baking soda in a medium bowl.
Stir in the orange juice, orange zest, shortening and egg, mix until well blended.
Stir in cranberries and nuts. Spread evenly in a greased loaf pan. I spray mine with Pam.
Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
Cool on a rack for 15 minutes, then remove from pan and cool completely.

I love this recipe. I triple it and freeze the extra loaves, or I give them to friends and family. When I triple the batch
use a whole bag of cranberries, I just thought I'd let you know so you wouldn't have to measure that out!
