8 quarts ripe tomatoes, do not peel
1 tsp. peppercorns
1 tsp. whole cloves
2 bay leaves
1 tbsp. sugar
12 sprigs parsley
4 onions. sliced
2 tbsps. salt

Directions:
Directions:
Wash tomatoes, quarter, discard over ripe tomatoes and remove spots. Tie spices in muslin bag and cook all ingredients together, gently until the juices flow, then simmer for 1½ hours. Strain, bring to a boil. Fill hot sterilized jars and process in hot water bath for 25 minutes, counting time after water begins to boil.
