1 can (15 oz.) chick peas
1 clove garlic
1 stalk celery
1 green onion
2-3 Tbsp. mayonnaise
1 Tbsp. brown/Dijon mustard
tsp. cayenne pepper
Salt and pepper

For serving:
Crusty bread or croissants
Tomato slices, salad greens, cheese (optional)

1. Drain and rinse the chickpeas. Dice the garlic, celery, and green onions.

2. Add all the ingredients to a food processor and pulse several times. Scrape down the sides with a rubber spatula and pulse again, until the mixture is well-combined but still chunky.

3. Mix well and adjust seasonings to taste. Serve on bread or toast with lettuce, tomato slices, or cheese if you like. Refrigerate any leftovers.
