Lupita Moncivias


1 large can of Hominy (Juanita's brand)
Pork shoulder (with bone)
2 chicken breasts (can add some drumsticks and thighs)
1 medium white onion
1 whole garlic clove
can of Green Enchilada sauce
1 tsp. oregano, dried (to taste)
Salt (to taste)
Water (2 hominy cans)
Red onion, radish, cabbage for garnish

Place hominy, garlic, salt, onion, and water in a large pot and bring to a boil, then put in chunks of pork and add chicken once pork is about done. Add green enchilada sauce and bring to a boil again. Cover and simmer for several hours (at least 4 hours), then add oregano. Garnish with chopped red onion, sliced radishes, and shredded cabbage. Squeeze lime wedges on each serving and top with some salsa

Salsa Lupe makes is tomatillos, jalapenos, salt and water in a blender).

Serve with corn tortillas
