6 oz. butter unsalted
6 oz self raising flour
6 oz caster sugar
2 tsp. baking powder
5 eggs
1 tblsp. vanilla extract

Frosting:
1/2 cup butter
3 tblsp cream
3 cups powdered sugar

Raspberry jam

Directions:
Directions:
Beat butter and sugar until very light and fluffy. Takes a few minutes so be patient. Add flour and baking powder. Beat eggs in a bowl. Add eggs a couple of tblsp. at a time and mix well after each addition scraping the sides. Fold in vanilla. Place in two greased 10 " rounds and bake at 350 for about 30 minutes or until toothpick comes out clean in the middle.
