1 c. plus 1 tbsp. olive oil
2 tbsp. minced garlic
1 tbsp. chopped fresh thyme
1 tbsp. chopped fresh rosemary leaves
2 chipotle chiles
1 tsp. ancho chili powder
2 tbsp. fresh lime juice
1¼ lb. shrimp, shelled and deveined
5 tbsp. olive oil
salt and fresh ground black pepper

In small skillet over medium heat, heat one tablespoon of olive oil and sauté garlic just until softened. Put the garlic, thyme, rosemary, chipotle chiles, chili powder, and lime juice in a blender and process until smooth. Add remaining cup of olive oil in stream and blend for two minutes until emulsified. Season to taste with salt and pepper. Rub shrimp with olive oil and season to taste with salt and pepper. Grill or broil for 2½ minutes per side. Serve immediately with red chili oil poured over.

If ancho chili powder is not available, mild Mexican red chili powder can be substituted. Marinade may be made up to one day ahead and refrigerated, covered. Reheat, stirring, before serving.
