1/4 cup apple cider vinegar
¾ cup olive oil
3 tbsp maple syrup

Shake ingredients in a jar; add more syrup to your taste.

Goat Cheese Salad

Place romaine lettuce as the base on each plate. Put spring mix on top for colour. Crumble goat cheese on top.
Fruit – strawberries, raspberries or blackberries
Nuts – choice of toasted pine nuts, walnuts or pecans

To toast nuts:
Spray frying pan with cooking spray or melt small amount of butter, add nuts.
On medium heat, cook until light brown stirring frequently. Do not look away as they burn quickly.
