Thai Beef or Chicken Curry Recipe

3 tbsp peanut or vegetable oil
3 onions, diced
3 cloves, garlic minced
1 tsp grated gingerroot
2 tbsp curry paste
1 lb lean ground beef
1 tbsp fish sauce
1 tsp packed dark brown sugar
1 can (398ml) coconut milk
3 tbsp lime juice
cup coriander leaves

In large skillet, heat oil medium-high heat; add onions cook until browned.
Stir in garlic, ginger and curry paste stirring for about 1 minute. Add beef until beef is seared about 5 minutes. Add fish sauce and sugar. Stir in coconut milk, reduce heat and simmer for 20 minutes. Stir in lime juice. Transfer to serving dish, garnish with coriander leaves.
Serve with basmati rice or rice noodles.
