4 slices bacon, chopped
1 large onion, peeled and chopped
3 garlic cloves, minced
3 lbs potatoes, peeled and sliced thin
1½ lbs chicken breast, boneless and skinless
2 c sliced carrots
2 c sliced celery
8 c chicken broth
1 tsp dried thyme
salt and pepper

Directions:
Directions:
Cook bacon. Add in onions, garlic. Saute 3-4 minutes to soften. Pour onion mixture into bottom crockpot.
Put chicken breast on top of onions. Add potatoes, carrots, celery, broth, thyme 1½ tsp salt, ½ tsp pepper.
Cook on high 8-12 hours, until chicken is cooked through.
Remove chicken breast, shred meat and return to soup.
