For the Crab Cakes:
1 lb. jumbo lump or back-fin crab meat
¼ c. mayonnaise
1 egg
1 tsp. lemon juice
½ tsp. Worcestershire sauce
1-2 tbsp. Old Bay Seasoning, to taste
⅓ sleeve Ritz crackers, crushed
melted butter, for brushing

For the Mustard sauce:
½ c. mayonnaise
⅛ c. prepared horseradish
⅛ c. dijon mustard
½ tsp. Frank's Red Hot
¾ tsp. fresh lemon juice

Directions:

Carefully pick through the crab meat to make sure there are no shells.

In a bowl, whisk the egg and mayonnaise together. Add in the lemon, Worcestershire sauce and Old Bay Seasoning. Lightly fold mixture into the crab meat being careful to not break up too many clumps. Add in the crushed Ritz Crackers. Using a ⅓ measuring cup, pack the crab meat to make little cakes and place on a baking tray. Cover and refrigerate for 1-2 hours.

Before baking, lightly brush with melted butter. Bake at 350º for 20 minutes, carefully turn over and then broil for about 5 minutes. Watch them closely so they don't burn!

For the sauce, mix all ingredients in a bowl and serve on the side.

In Colorado, Costco has the best deals on crab. You can also serve with a tartar sauce or cocktail sauce (or no sauce, if you are Pete Condon). These are excellent in the summer with corn on the cob and a side salad. They make great, easy appetizers around the holidays as well. If you are a true Marylander, you won't put any minced bell peppers in the cakes! Enjoy!
