For Spinach Balls: 2 packages frozen spinach, thawed and water squeezed out 4 scallions chopped fine 1 c. parmesan cheese ¼ - ½ c. butter or olive oil 1 c. panko or other bread crumbs 3 eggs huge dash of nutmeg
For Hot Mustard Sauce: ¼ c. dry mustard powder ½ c. white vinegar 1 egg ½ tsp. sugar
Combine all spinach ball ingredients, mix well (use hands to really combine). Make into 1 inch balls. Bake at 350º for 10 minutes, turn and bake 5 more minutes browning both sides. For the mustard sauce, add ingredients to sauce pan. Heat on low until barely bubbling, stir till thickened.
The spinach balls can be made ahead and frozen before they are baked.
