For Spinach Balls:
2 packages frozen spinach, thawed and water squeezed out
4 scallions chopped fine
1 c. parmesan cheese
¼ - ½ c. butter or olive oil
1 c. panko or other bread crumbs
3 eggs
huge dash of nutmeg

For Hot Mustard Sauce:
¼ c. dry mustard powder
½ c. white vinegar
1 egg
½ tsp. sugar

Directions:
Directions:
Combine all spinach ball ingredients, mix well (use hands to really combine). Make into 1 inch balls. Bake at 350º for 10 minutes, turn and bake 5 more minutes browning both sides. For the mustard sauce, add ingredients to sauce pan. Heat on low until barely bubbling, stir till thickened.
