2 cups flour
2 Tbsp brown sugar
3/4 tsp salt
1/2 tsp cinnamon
2.3 cups shortening or butter
1 Tbsp cider vinegar
5 - 6 Tbsp ice water

Directions:
Directions:
Combine flour, brown sugar, salt and cinnamon in a large bowl.
Cut in shortening or butter until the mixture resembles course crumbs.
Sprinkle vinegar over the flour mixture. Add ice water, 1 Tbsp at a time.
Mix gently until it forms a soft dough (holds together when pressed between your fingers).
Shape pastry into 2 balls, one slightly larger than the other.
Place in refrigerator for about 20 minutes before rolling out to make pie crusts.
When you've assembled your pie, brush the top with egg white and sprinkle with sugar.

This recipe is for a 2-crust pie, or 2 single crust pies. If you're making a pie that may not go with the
cinnamon flavor just leave it out, but for fruit pies it's the best.
