4 cups sugar
1 cup light corn syrup
3/4 cup water
3 egg whites
1 tsp vanilla
1 cup chopped pecans

Directions:
Directions:
Combine sugar, corn syrup and water in a heavy sauce pan. Try not to get sugar on the sides of the pan, if you do, just take a drop of water and wash it off.
Bring to a boil and simmer to hard ball stage (250-260º F) on a candy thermometer
While candy is boiling, beat egg whites to firm peaks
Once candy has reach hard ball stage, pour the mixture into the beaten egg whites, adding vanilla and beating constantly
Continue beating until candy holds its shape and loses the glossiness
Add pecans stirring with a wooden spoon
Drop quickly onto waxed paper
