2 cups flour
1 1/2 cups sugar
3 tsp baking powder
1 tsp salt
1/2 cup shortening or butter
1 cup milk
1 Tbsp lemon peel
1 tsp vanilla
Directions:
Directions:
Preheat oven to 350º F.

Sift together in a large bowl: flour, sugar, baking powder and salt. Add 1/2 cup shortening or butter,
mixing it in very well. Mix together the milk, lemon peel, and vanilla in a medium bowl.
Add 2/3 of the dry ingredients to the milk mixture, mix until smooth.
Pour all into the big bowl, add the eggs and beat for about 2 minutes.

Turn out into prepared 8" cake pans. Bake for 25 - 30 minutes.
Cool cake in the pans for about 5 minutes before turning out onto a cooling rack.
Frost with your favorite cake frosting!

This is a good basic cake if you want one from scratch. I use it for making banana pudding instead of vanilla wafers.
Or frost it with a dreamy fluffy frosting. It's good anyway you fix it.
