4 lb. pork belly skinned
5 tbsp. pork rub
1 cup bbq sauce
1 tbsp. honey
½ cup chicken stock
3 tbsp. salted butter, cut into small cubes

Step 1
Cut belly into 2-inch cubes. Season generously with pork rub; cover and place in refrigerator overnight.
Step 2
Adjust smoker to 250ºF.
Step 3
Place pork cubes spaced out onto a non-coated wire rack. This will make it easier to move them ; Place rack into the smoker and cook 2 hours.
Step 4
In a bowl, combine the BB sauce, honey and stock. Remove cubes from smoker and place i in a foil pan large enough that they are in a single layer. Pour over the liquid mixture making sure all cubes are well coated. Sprinkle the butter cubes across the top then cover pan with foil and return to the smoker for another 1½ hours.
Step 5
Remove foil, stirring the cubes to coat once more, cook 30 minutes more until glaze is sticky and thick.
