1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup creamy peanut butter, not natural peanut butter
1 lg egg
2 tsp vanilla
3/4 cup all purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 1/2 cup quick oats
1 cup mini semi-sweet chocolate chips
1 cup mini M&M candy

Preheat oven to 350º F. Line cookie sheets with parchment paper or silpat liner.
In a large bowl or bowl of a stand mixer, cream together butter and peanut butter until light and fluffy,
about 2 - 3 minutes, make sure, it's important, the dough will be much lighter and look fluffy.
Mix in egg and vanilla, scraping down sides of bowl as needed. In a separate bowl, add flour, baking soda,
baking powder and salt, whisk to combine. With mixer on low speed, slowly add flour mixture to the wet
ingredients and mix until just combined. Add oats, chocolate chips and M&M candies. Mix on low just until
dough is combined. Use a small or medium cookie scoop or about 1 - 2 Tbsp cookie dough and place on baking
sheet. They should look like golf balls.
Bake for 7 - 9 minutes, until the edges are just starting to brown and top still looks slightly uncooked.
Remove from oven and let cool for 5 minutes on the baking sheet before moving them to wire rack to cool.
For more of a cookie shape, take bottom of a glass cup and gently press down on the cookie for a few seconds after
they come out of the oven or just press some additional M&M's on the top of cooked cookies and that will naturally press
them down. The cookies don't spread much at all while baking.
Can also press additional M&M's on the top of cookie dough before putting in the oven for a pretty presentation.

Can also make 1/4 cup size cookies, form 1/4 cup size ball and slightly flatten on the
cookie sheets. Bake monster sizes about 11 - 13 minutes.
