Mexican Rice Recipe

1/4 cup oil
2 cups white rice
4 cups of water
2 chicken bouillon cubes
salt
pepper
cumin, to taste

Directions:
Directions:
Heat oil in a skillet (I use cast iron).
Brown rice in hot oil until golden brown. While the rice is browning, combine water and bouillon in a microwave sage bowl and heat for 3 minutes. After the rice browned, add the water mixture, tomato sauce, salt, pepper and cumin.
Cover, reduce heat to low and simmer for 30-40 minutes, stirring as needed. Fluff with a fork at the end and serve.

I love warm corn tortillas to scoop up my rice. This is the way my Grandma Davilla made rice.
