100g cold butter
150g plain flower
10g sea salt
100g mature cheddar
75g almonds, hazelnuts, walnuts chopped
600g pumpkin
300g butternut squash
50ml olive oil
1 onion
garlic
nutmeg

Directions:
Directions:
Preheat oven to 350 degrees. To make pumpkin topping, work the cold butter into sieved flour. Rub your finger until it forms a sandy texture. Add the salt, cheese, and nuts.

Cut the vegetables into small, bit size pieces and sweat into a large pan. Stir occasionally until the vegetables start to take on colour. Add the onion and garlic and sweat under foil. Pour into a ovenproof dish and sprinkle with the topping. Bake for 20 min.
