1 Cup (Aunt Jemima enriched yellow corn meal)
1 Cup All Purpose Flour
2-4 Tablespoons Sugar
4 Teaspoons Baking Soda
1/2 Teaspoon Salt
1 Cup milk
1 Egg
1/4 Cup Vegetable Oil

Directions:
Directions:
Preheat oven to 425*
In large bowl, combine corn meal, flour, sugar,baking powder and salt.
Add milk, egg and oil.
Beat until smooth, about a minute.
Bake in greased 8" square baking pan for 20-30 minutes until knife comes out clean.

She loved making corn bread but there was only one kind of corn meal she would use. The only place she knew they sold it was back east in Virginia. So she would contact her brother and swap money for him to ship her some Aunt Jemima enriched yellow corn meal, Aunt Jemima flour and Hunny Buns. Our family were excited when that box would show up.
