3 tbsp. curry powder
2 tbsp. cider vinegar
3 tbsp. butter
1 onion, chopped
2 garlic cloves, chopped
2 tbsp. (generous) chopped fresh basil
½ tsp. dried crushed red pepper
1½ c. low-salt chicken broth (more if needed)
¾ c. whipping cream
¾ c. coconut milk (more if needed)
2½ c. cooked chicken
salt and pepper to taste
2 c. cooked rice

Stir curry powder and vinegar in small bowl to blend. Melt butter in heavy large skillet over medium heat. Add onion and garlic; sauté until onion is translucent, about six minutes. Add curry mixture; stir two minutes. Add basil and crushed red pepper; stir one minute. Add broth, cream and coconut milk; boil until reduced to sauce consistency, about 10 minutes. Add chicken; stir until heated through. Season with salt and pepper.

Accompany the curry with rice, broccoli and a variety of condiments like chopped peanuts, chopped green onions, mango chutney, golden raisins and chopped red bell pepper.

Great make-ahead dish for a party. I have used this recipe differently. Add the fresh basil right before serving. Apparently, to bring the flavor from fresh basil you should avoid cooking it too much. Rotisserie chicken is a great alternative to cooking chicken pieces.
