Pasta:
3 eggs
1 cup flour
1 cup water
1 tsp. salt

Filling:
1 lb. ricotta
Grated Parmesan Cheese
Salt and Pepper
Parsley
Pinch of sugar
2 eggs

Directions:
Directions:
To make the pasta:
Mix all ingredients for pasta. Beat till fluffy. Fry in a small cast iron skillet like a pancake, one at a time.

To make the filling:
Mix all ingredients for filling. Beat well. Fill each pancake and roll up. Top with tomato sauce and bake for about an hour at 350. Makes 20-25.
