3 tablespoons oil

1 pound boneless chicken breasts, thinly sliced

1 white onion, thinly sliced

1 green pepper, thinly sliced

1 red pepper, thinly sliced

1 cup V8 juice (I used a can)

2 tablespoons lower sodium taco seasoning mix

8oz package of shredded sharp cheddar cheese

Loaf of bakery french bread (sliced 1/2 inch thick)

1 cup favorite salsa

Directions:

Heat the oil in a large skillet over medium-high heat.

Add the chicken, cook and stir until lightly browned, about 5 minutes. Remove chicken from skillet

Stir in the onions and red peppers, and cook and stir for 5 minutes or until the vegetables are tender.

Stir in the chicken, V8 juice and taco seasoning. Mix well. Cook mixture until the juice has thickened and the chicken is well coated with sauce, about an additional 5 minutes.

Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Broil each side of the bread slices for a minute or two

Spread salsa over each slice of French bread. Evenly spoon the chicken mixture on top of the salsa topped bread. Sprinkle each sandwich with Cheddar cheese.

Place sandwiches under the preheated broiler and cook for 5 minutes or until the cheese is melted and beginning to brown.

Serve with mexican rice and/or black beans

Next time I may try to use my own seasoning with chili powder and onion powder instead of the taco seasoning pack.
