12 oz egg noodles
4 tbsp butter, divided
1 cup diced onion
8 oz. cremini mushrooms, sliced (optional)
2 cloves garlic, minced
2 tbsp all-purpose flour
1 tbsp Worcestershire Sauce
tsp salt, or more to taste
Black pepper to taste
1 c chicken stock
c sour cream
2 heaping cups of shredded rotisserie chicken
Fresh parsley for garnish

Directions:
Directions:
Cook the egg noodles in salted water according to the package directions. Once the noodles are cooked, draina nd return them to the pot with 2 tbsp of butter. Toss to coat.
Melt the remaining 2 tbsp of butter in a large skillet over medium heat. Add the onions and mushrooms and cook for 6 - 8 minutes until the vegetables have softened and are slightly caramelized. Add the garlice and cook for a final 30 seconds untilt he garlic is fragrant. Season with a pinch of salt and pepper.
Add the flour to the skillet. Use a spatula to work the flour into the vegetable mixture forming a paste-like coating on the vegetables. Cook for 1 minute and then add the Worcestershire Sauce, salt and some freshly ground black pepper. Slowly add the chicken stock in cup increments, stirring constantly to prevent lumps.
Once your chicken stock has been added, let the sauce thicken for a few minutes and then stir in the shredded chicken. Remove the pan from the heat and stir in the sour cream. Stir to combine. Taste and add more salt and pepper, if needed.
Return the pan to low heat until mixture is heated through. Be careful as mixture will curdle over high heat. If the sauce gets too thick, thin it with cooking water from the pasta.
Serve the stroganoff either by stirring the noodles directly into the sauce to combine everything, or by portioning out the noodles onto individual plates and spooning the sauce over the top. Garnish with fresh parsley.
