1 Med - lg potato peeled and diced about 2 - 3 cups
1 lg cauliflower broke into florets - put aside 2 cups of florets
1 med carrot peeled and chopped
3 med cloves of garlic peeled
1 1/2 cup chopped onion
1 1/2 tsp salt
4 cup water
2 cups (packed) grated cheddar - plus extra for garnish
3/4 cup milk
1 tsp dill
1/2 tsp caraway seeds
black pepper to taste

Directions:
Directions:
Place potato, cauliflower (except for the 2 cups reserved), carrot, garlic, onion, salt and water in lg saucepan.
Bring to a boil, then simmer till all vegetables are tender
Puree in a blender and transfer to lg kettle
steam the reserved cauliflower pieces till just tender and add to the puree.
With all the remaining ingredients heat gently and serve topped with a little extra cheese.
