Amelia's Pumpkin Rolls Recipe

Cake Mixture:

1 cup sugar 3 eggs

⅔ cup Libby's pumpkin 1 tsp lemon juice

cup flour 1 tsp baking powder

2 tsp cinnamon tsp salt

tsp nutmeg


1 cup powder sugar

cup margarine

1 large cream cheese

tsp vanilla

Grease a 15 x 10 x pan and then coat with powder sugar.

Mix all of the cake ingredients and pour into the prepared pan.

Bake at 350 for 13-15 minutes.

After baking, remove cake from pan and place on to a tea towel that has been covered with powder sugar. Roll up the cake in the towel and let cool.

Beat the filling ingredients together until smooth.

Once the cake has cooled, un-roll and spread with the filling. Re-roll and cover with foil and refrigerate.
