One 16-ounce can refried beans
1 ounce taco seasoning
1 cup homemade guacamole
8 ounces sour cream
1 cup pico de gallo
2 cups cheddar cheese, shredded
2 Roma tomatoes, diced
1/2 bunch scallions, sliced
One 2-1/4 ounce can of black olives, drained and sliced
Eight 9-ounce clear plastic cups
In small bowl, mix taco seasoning with refried beans.
Assemble layers as follows for each cup:
Beans with taco seasoning: 2 tablespoons
Sour cream: 2 tablespoons
Guacamole: 2 tablespoons
Pico de gallo: 2 tablespoons
Shredded cheese: 2 tablespoons
Tomatoes: 2 teaspoons
Green onions and olives: 1 teaspoon
Store in refrigerator until ready to serve.
Just before serving, garnish each cup with two or three tortilla chips.
