Juice of 1 lemon
4 tbsp. olive oil
Salt and pepper to taste
2 ripe Bartlett or Anjou pears, cored and thinly sliced
6 oz. arugula
1/2 cup goat cheese, crumbled
1/3 cup walnut halves, lightly toasted cup

Directions:
Directions:
In a small bowl, whisk together olive oil add lemon juice. Season to taste with salt and pepper and set aside.

Placed sliced pears in a large bowl. Whisk the olive oil and lemon juice again, and pour over pears, tossing gently to combine.

Add arugula and toss to evenly distribute the ingredients. Season to taste with salt and pepper. Arrange on a large platter or divide evenly between 4 salad plates . Garnish with the crumbled goat cheese and walnuts.
