1 cup Boiling Water
1 tbsp. Instant Coffee
1 ¾cup all-purpose Flour
2 cup Sugar
¾ cup unsweetened Cocoa
2 tsp Baking Soda
1 tsp Salt
1 cup Low-fat Buttermilk
2 eggs, lightly beaten
1 tsp Vanilla Extract
⅓ cup Vegetable Oil
1 8oz Whipped Topping, Cool Whip
2 cup Strawberries, sliced

Directions:
Preheat oven to 350º degrees F. Combine water and coffee in a bowl. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (flour-salt in a large bowl. Combine coffee mixture, buttermilk, eggs, oil and vanilla; add to sugar mixture, beating a medium speed until well blended. Pour into 2 9" prepared cake pans. Bake for 45 minutes. Cool. Spread 1 cup topping on first cake layer. Top with second cake layer. Spread remaining topping and arrange strawberries on top.
