1 Tbsp Olive Oil
6-8 Chicken thighs
1 Tbsp Essence
˝ tsp Salt
˝ tsp bl Pepper
2 Tbsp Butter
16 oz (2 pkg) Button Mushrooms, sliced
1 c Yellow Onion, sliced
1 Tbsp Garlic, minced
2 Tbsp Flour
2 Tbsp Tomato Paste
2 c dark Chicken Stock
2 Tbsp coarsely chopped Rosemary

Directions:
Directions:
Place a 10" straight-sided sauté pan over medium high heat and add the oil. Season the chicken thighs with essence, salt and pepper. Place chicken skin side down in pan and sear until golden brown on both sides. Remove from pan and add butter and mushrooms. Sauté, stirring occasionally until browned and most liquid has evaporated. Add onions and garlic, sauté 3-4 minutes. Sprinkle flour into pan and cook 4-5 minutes. Add tomato past, stock and rosemary to pan, bring to a boil, turn heat down and simmer. Return chicken to pan skin side down and cook 30 minutes. Turn chicken over and cook until meat is tender, about 30 minutes. Serve over hot rice.©
