1 Whole Chicken (3-4 lbs.)
40 Unpeeled Cloves of Garlic
¼ C. Dry White Wine

Directions:
Directions:
Preheat the oven to 450 º. Wash chicken and pat dry. Rub inside and out with one split garlic clove. Lightly salt and pepper. Tuck back the wings and truss the legs.

Place the chicken breast side up on a roasting rack in a baking pan and arrange the garlic around the pan. Place in the oven and reduce the heat to 350 º. Roast 20 minutes and then pour the wine over the chicken. Baste in 10 minutes and again 10 minutes later. Roast for 1 hour or longer until done.

1/2 C Chicken Stock
1/2 C Whipping Cream
The cooked Garlic Cloves

Directions:
Directions:
Put the chicken stock in a small saucepan and add the whipping cream. As it's heating over a medium heat, squirt all of the garlic cloves into the sauce, discarding the skin. Simmer a few minutes. Correct the seasoning with salt and pepper to taste. Serve with the carved chicken.
