2 tbsp. oliveoil
1 lb. ground beef
1 onion, chopped
1 carrot peeled and chopped
1 celery stalk, chopped
1 tsp. chopped fresh thyme
1/2 tsp. chopped fresh rosemary
2 tbsp. Worcestershire sauce
1/2 tsp. sea salt
1/4 tsp. black pepper
1/4 cup heavy cream
1 sweet potato,peeled,ends cut flat, and spiralized into potato shaped noodles
3 tbsp. butter, melted

Directions:

Preheat oven to 400º F.

In a large saute pan, heat the oil over medium-high heat until it shimmer. Add the ground beef and cook, crumbling with spoon, until browned, about 5 minutes.
Add the onion, carrot, and celery and cook, stirring occasionally, until the vegetables are soft, aboout s5 minutes.

Add the thyme, rosemary, Worcestershire sauce, salt, pepper, and heavy cream. Put the mixture in a 9 x 9 inch baking pan. Stir to combine.

Place the sweet potato rounds in an even layer over the top. Brush with butter.

Sprinkle 2 ounces of grated cheese over the potatoes before baking if desired.
