2 cups flour
¼ cup sugar
3 tsp baking powder
1 tsp salt
1 egg
1 cup milk
¼ cup vegetable oil or melted shortening

Directions:
Directions:
Heat oven to 400º.
Grease bottoms only of 12 medium-sized muffin cups.
Stir together; flour, sugar, baking powder & salt. Make a "well" in the center of the mixture. Pour in egg, milk & shortening. Stir just until flour is moistened. Batter will be slightly lumpy. Do not over mix.
Fill muffin cups ⅔ full. Back for 20 to 25 minutes, or until golden brown.
