4-5 c. rhubarb
1¾ c. sugar
½ c. butter
⅛ tsp. salt
1 c. flour
1 tsp. baking powder
½ c. milk
1 T. cornstarch
1 c. boiling water
Pinch of salt

Directions:
Directions:
Cut fruit into small pieces. Place in oblong Pyrex cake pan. Mix ¾c. of the sugar, the butter, salt, flour, baking powder, and milk together. Spread over the fruit. Mix the remaining sugar, cornstarch, and salt together. Pour over the batter. Pour the boiling water over it all. Bake at 375º for 1 hour.

When I think of rhubarb cobbler and pie, it brings back memories of our Grandma, her house on Thurston Ave. (where Mom was born and grew up), and Grandma baking and cooking for us when we were back there. Another treat that we had only when we were back in Newport was “ Coffee Milk”. It was a glass of milk, 1 or 2 T. of brewed coffee, and plenty of sugar. I remember feeling pretty special when we had this with our breakfast!
