50g Unsalted Butter, softened
100g Sugar
2 Eggs, room temp.
Pinch of Salt
150ml Coconut Milk
45ml Milk
115g Rice Flour NOT Glutinous Rice Flour
1-1/2 tsp. Baking Powder
50g Macapuno Sweet Coconut Strips (found at the filipino store)

Directions:

1. Cream butter, and sugar until well blended.
2. Add eggs one at a time until well mixed.
3. Stir in coconut milk & regular milk and blend well.
4. Measure flour & baking powder together and mix, then slowly add into the liquid mixture.
5. Add in the macapuno coconut and stir well.
6. Bake at 350 F for 15-20 min.

***NOTE: Line cake pan with banana leaves and pour mixture into pan. If you are not using banana leaves use wet cloth under the pan filled with some water so the cloth don't burn and bake.
