Ingredients:
10 to 12 mild Italian sausages...
2 cups dry red wine...
1 large red bell pepper, sliced in 1/4 inch rings...
1 large yellow bell pepper, sliced in 1/4 inch rings
2 mini Japanese eggplants, sliced lengthwise...
2 large portobello mushrooms, sliced lengthwise...
1 large red onion, sliced 1/4 inch thick, I use at least 2 onions...
3/4 cup extra-virgin olive oil...
1 t dried oregano...
3 t basil, chopped, fresh is a must...
Salt and pepper, to taste...

Directions:
Directions:
Place sausages in a large plastic bag and add the red wine, seal bag, put in fridge for at least 2 hours...
Be sure to turn the bag 3 or 4 times while in fridge to be sure all are soaking in wine at times...
Put al the veggies in a large baking dish or a large plastic (2 gallon size) add the oregano, basil and S & P,
Now add the olive oil and mix all ingredients well until all are covered with the oil and herbs...
Heat grill to 375º, now grill veggies until tender and they have grill marks, too...
Arrange on a platter and put in a low heated oven, 225 or 250 degrees, no higher...
Grill the sausages after removing the veggies...
Do not pierce the sausages, turn with tongs frequently...
Once done, 15 to 20 minutes, remove to the platter with the veggies and ....
ENJOY!

Personal Notes:
Personal Notes:
Suggest placing sausages in a bag in early morning and grill anytime after noon....
Do not leave sausages in bag more than 4 hours, they get soggy and don't taste that good...
I mix it up with hot, mild and sweet Italian sausages, many folks do not care for the hot, best to go with mild and sweet if you do not know your guests that well...
Italian bread sliced thick or in 6 inch lengths and guests can make sausage and pepper sandwiches...
Good red wine, a green salad and you are livin' the dream!
