1/2 c. Crisco
1 stick butter
2 c. sugar
1 t. vanilla
1 t. baking soda
1 c. buttermilk
2 c. flour
1/2 t. salt
5 eggs, separated
1 c. coconut
1 c. pecans

Icing:
1 stick butter
8 oz. cream cheese
1 t. vanilla
1 box powdered sugar (4 cups)
1 c. pecans
1 c. coconut

Directions:
Directions:
Cream butter, sugar, and Crisco. Add egg yolks, one at a time. Add dry ingredients, then buttermilk and vanilla. Stir in coconut and nuts. Fold in beaten egg whites (beat until stiff). Bake 30 minutes at 350


Beat all icing ingredients until smooth and add 1 cup pecans and 1 cup coconut.
