3 Tbsp butter
6 large sweet onions, thinly sliced
1 tsp salt
2 cups water
1/2 cup burgundy wine
3 cups beef stock
3 cups chicken stock
4-6 sprigs fresh thyme
1 bay leaf
salt and pepper to taste
2 1/2 cups shredded Gruyére or swiss cheese
1 baguette, sliced into 1/2" slices

Sauté onions in butter and cook until carmelized Deglaze the pan with the wine, scraping up any bits left in the pan. Cook for 6-8 minutes. Stir in Stocks, Thyme and bay leaf. Cover, simmering for an hour.

To serve: Ladle into individual crocks, top with bagette slice and shredded cheese. Place on cookie sheet and place in oven. Broil just until cheese starts to bubble and brown.
