2 Cups Flour
1 3/4 Cups Sugar
2 teaspoons Baking Soda
1 teaspoon Salt
2 teaspoons Cinnamon
4 Eggs
1 Cup Oil
4 Cups Grated Raw Carrot
1/2 Cup Chopped Nuts (optional)

Directions:
Directions:
Preheat oven to 350. Grease 2 loaf pans or 1 tub pan or 2 8" round cake pans.

Combine flour, sugar, baking soda, salt, and cinnamon. In large mixer bowl beat eggs till frothy. Slowly beat in oil. Gradually add flour mixture beating until smooth. Mix in carrots and nuts.

Bake 25-50 minutes or until cake tester comes out clean (depends on pan size).
 

Cream Cheese Frosting

1 (8 oz) Package of Softened Cream Cheese
1 Tablespoon Milk
1 teaspoon Vanilla
4 Cups Powdered Sugar

(May need to double the recipe based on cake size)

Beat cream cheese, milk, and vanilla on low speed until smooth. Gradually beat in powdered sugar one cup at a time, until smooth and of spreading consistency.
