1 1/2 Cup Coarsely Chopped Cranberries
1/2 Cup Sugar

3 Cups Sifted Flour
4 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1 Cup Sugar
1/2 Cup Vegetable Shortening
1 Cup Chopped Nuts
2 teaspoons Grated Lemon Rind
2 Eggs
1 Cup Milk

Directions:
Directions:
Preheat oven to 400º. Grease or line with paper muffin pan.

Combine cranberries and sugar in a small bowl. Let stand while preparing batter.

Sift sifted flour, baking powder, salt, and sugar into a large bowl. Cut in vegetable shortening until mixture is crumbly. Stir in chopped nuts and grated lemon rind. Beat eggs in a small bowl until light, stir in milk. Add liquid all at once to flour mixture. Fold in cranberries. Spoon in muffin pan cups , filling each 2/3 full.

Bake for 20 minutes.
