4 Tablespoons Butter
4 Tablespoons Olive Oil
2 Lb Boneless Turkey Breast (from Fresh Market)
1/2 to 3/4 Bottle of White Wine
5 Fresh Sage Leaves
Salt and Pepper

Directions:
Directions:
In a large saucepan, heat the butter and oil. Add the turkey and brown it on all sides (the meat is browned when it no longer sticks to the pot). Use two wooden spoons to turn the meat.

Pour in wine and sage leaves. Cover the pan, reduce heat, and let it simmer for about 1 hour. Check occasionally that there is still 2 inches of wine left in the pot.

When done, slice the turkey and serve with the pan juices.
