1 Tsp Salt
3 Cloves minced Garlic
2 Tbsp Lemon Juice
1 C plain Yogurt
1/2 Tsp Turmeric
2 Tsp Garam Masala
1/2 Tsp Cayenne Pepper
1/4 Tsp Orange Food Coloring
8 Chicken thighs, skin removed
2 Tsp Olive Oil for brushing

1. In large bowl, mix Salt, Garlic, Lemon Juice, Yogurt, Turmeric, Garam Masala, Cayenne Pepper and Food Coloring. Add Chicken to marinade, cover and refrigerate for at least 4 hours.
2. Prepare Smoker with wood chips, Pecan or Mesquite bring to 225º.
3. Remove Chicken from Marinade and put on race in smoker for 1 to 1 1/2 hours or until thickest part of Chicken is 165º, In the last 30 minutes of smoking brush Oil on Chicken several times while smoking.

If Grilling, the cooking time will be about half the time or less. Garnish with sprigs of parsley.
